Cocoa Butter

Cocoa butter is obtained from the seeds of the Theobroma Cacao tree, which contain about 50-57% cocoa.
The process consists of hot pressing in hydraulic presses.
The end result? <A valuable oil, without which chocolate would not exist.

The cacao is a plant originating in tropical America, with large berries (cabosse) containing numerous seeds. According to legend, the plant was given to humans by the feathered serpent god Quetzalcóatl, called by the Aztecs, to alleviate human fatigue.

Where does the name cocoa come from?

The name cocoa derives from a word of Proto-American origin, pronounced 'kakawa', dating back to around 1,000 BC.
In those lands, the seeds of the plant were used not only for food, but also for religious, therapeutic and economic purposes.

The time when cocoa arrived in Europe cannot be established with certainty.
The first written evidence of the appearance of cocoa in the Old World comes from the documentation of the visit of a delegation of Dominican friars, who returned from Verapaz after an attempt to subjugate the natives, in 1544.

Bronte and Agrigentino Pistachios
PDO

VizioVirtù Venice uses exclusively the Pistachio di Bronte e Agrigentino DOP (Protected Designation of Origin).

For our spreads and delicious ganaches, we use only these pistachios with their unmistakable flavour: the green gold of Sicily.

The pistachio plant originated in Western Asia and then spread to the Mediterranean and the Middle East.
The Bronte pistachio is a special kind of pistachio. Why? Because of the lava soil (due to the presence of the Etna volcano), the common pistachio plant must be grafted onto the Pistacia Terebinthus species, the only way it can resist the drought and rocky soil typical of the area.

Since 2004, the Bronte pistachio has been protected by the Consorzio di Tutela del Pistacchio di Bronte.

IGP Piedmont Hazelnuts Round Trilobate

We at VizioVirtù Venice, for our Gianduja chocolatewe use exclusively the Piedmont Hazelnuts PGI (Protected Geographical Indication) of the Langhe.

For the ancient Greeks and Romans, the hazelnut plant was a synonym for happiness and well-being. For this reason, they loved to give it as a gift to family and friends.

The hazelnut spread between 1800 and 1900 and became the gold of the Alta Langa, at that time much more resistant to pests than vines.

The IGP Piedmont Hazelnut is considered to be the absolute best and the tastiest. It has a delicate aroma and a crunchy, dense flesh.
Some people consider it an elixir of life, thanks also to its organoleptic properties.
